Mixed Tomato Salad with Buratta and Basil Cayenne Pesto


  • 2 cups baby multi colour tomatoes, halved
  • 1 medium cucumber cut into ribbons
  • 1 ball fresh buratta
  • 1/2 cup rocket, rinsed
  • 1/2 cup basil, rinsed
  • 1 cup baby spinach, rinsed
  • 2 tbsp BLACK MAMBA Basil Cayenne Pesto
  • 2 tbsp extra virgin olive Oil
  • 1 fresh lemon juice 
  • Salt flakes and pepper for seasoning 
    croutons for serving


Place the halved tomatoes, rocket, cucumber ribbons, baby spinach, basil in a mixing bowl, olive oil, lemon juice, seasoning and toss the ingredients. Place burrata on top of salad and drizzle BLACK MAMBA Basil Cayenne Pesto on top and serve with croutons.
