Spicy Grilled Cabbage with Peri Peri Mayo Dip

Ingredients
- ½ cabbage (cut into 4 wedges)
- 4 tbsp extra virgin olive oil
- 1 clove of garlic (minced)
- ¼ tsp dried chilli flakes
- ½ handful basil (finely chopped)
- ½ handful Italian parsley (finely chopped)
- 1/2 lemon zest and juice
- 1 pinch salt and black pepper
FOR THE PERI PERI MAYO DIP
- 1/4 cup mayonnaise
- 4 tbsp BLACK MAMBA PERI PERI CHILLI SAUCE
Instructions
- Preheat oven up to 200°C
- In a large bowl, mix olive oil, garlic, chilli flakes, herbs, lemon zest and juice. Add the cabbage wedges and toss through the dressing until well coated.
- Place on a baking tray and cover with foil, roast for 30 minutes, then take off the foil and pop them back for another 15 minutes to get crispy and brown.
- Meanwhile, mix the ingredients for the dip and place into a small bowl.
- Remove the cabbage from the heat, serve warm with the dip and garnish with chopped herbs.
