Spicy Grilled Cabbage with Peri Peri Mayo Dip

Ingredients

  • ½ cabbage (cut into 4 wedges)
  • 4 tbsp extra virgin olive oil
  • 1 clove of garlic (minced)
  • ¼ tsp dried chilli flakes
  • ½ handful basil (finely chopped)
  • ½ handful Italian parsley (finely chopped)
  • 1/2 lemon zest and juice
  • 1 pinch salt and black pepper

FOR THE PERI PERI MAYO DIP

  • 1/4 cup mayonnaise 
  • 4 tbsp BLACK MAMBA PERI PERI CHILLI SAUCE

Instructions

  1. Preheat oven up to 200°C
  2. In a large bowl, mix olive oil, garlic, chilli flakes, herbs, lemon zest and juice. Add the cabbage wedges and toss through the dressing until well coated.
  3. Place on a baking tray and cover with foil, roast for 30 minutes, then take off the foil and pop them back for another 15 minutes to get crispy and brown.
  4. Meanwhile, mix the ingredients for the dip and place into a small bowl. 
  5. Remove the cabbage from the heat, serve warm with the dip and garnish with chopped herbs.
