Grilled Prawns with Habanero & Lime Butter

Ingredients

For the prawns

  • 1 cup extra virgin olive oil
  • 12 garlic cloves, peeled
  • 1/4 cup chopped fresh cilantro
  • Grated zest of 1 lime
  • 1 teaspoon salt
  • 16 extra-large prawns, deveined with tail and heads on.
  • Salt and pepper, to taste

For the Habanero Lime Butter

  • 1 tbsp BLACK MAMBA HABANERO CHILLI SAUCE
  • 1/2 cup butter, softened
  • 1 tbsp minced garlic
  • 1 tbsp minced shallots
  • 1/2 tsp salt

Instructions

  1. For the prawns. In a mixing bowl, combine all the ingredients until the prawns are coated with the mixture.
  2. Preheat grill pan to medium heat
  3. Brush a generous amount of the mixture onto each side of the prawn, then lightly season with salt and pepper. Cook on the grill for approximately 1 to 2 minutes on each side.
  4. Prepare the Habanero Lime Butter: Combine all ingredients in a bowl and mix until well incorporated.
  5. Serve the habanero lime butter for dipping, or, for additional spice, lightly brush each side of the prawns with the Habanero Lime Butter while grilling. Garnish with lime slices and chopped coriander.
