Vegetarian Hot Honey “Pulled Pork” Sandwich

Ingredients
- 1 tablespoon olive oil
- 400g Portobello mushrooms, wiped clean and thinly sliced
- 1/2 red onion, thinly sliced
- 1 clove garlic, crushed
- ½ cup BBQ sauce
- 1 tbsp BLACK MAMBA HOT HONEY
- 1 ½ tablespoons water
- Salt and pepper
- Sourdough bread, sliced
Red Cabbage Slaw (Optional)
- 1/4 cup Eggless mayonnaise
- 1/2 cup red cabbage, thinly sliced
- 1/4 cup rocket
Instructions
- Heat the oil in a large skillet on medium heat.
- Add the mushrooms and onions and stir frequently until the mushrooms lose their water and the onions become translucent and soft.
- Add salt and pepper to taste. Cook until the onions caramelize and the edges of the mushrooms begin to crisp up.
- Add BBQ sauce, BLACK MAMBA HOT HONEY and water to the pan and stir until the mushrooms are completely coated in the sauce. Bring the mixture to a boil on medium heat and then reduce the heat to a low simmer. Cook for 15 minutes, stirring frequently, until the sauce is thick and sticky.
- Serve the mushrooms on toasted sourdough bread with red cabbage slaw and rocket.
